    docs: Add comprehensive documentation for all ML models in models.md

    Summary

    This PR adds comprehensive documentation for all Machine Learning models used in Robotoff to docs/references/models.md.

    Changes

    • Added detailed documentation for all 10 ML models currently in production:
      • nutrition_extractor - Multimodal transformer for nutritional value extraction
      • universal_logo_detector_yolo - YOLOv8 model for brand logo detection
      • nutriscore - YOLO model for Nutri-Score label detection
      • nutrition_table - YOLO model for nutrition table detection
      • price_tag_detection - YOLO model for price tag detection
      • price_proof_classification - Image classifier for price proof validation
      • category-classifier-keras-image-embeddings-3.0 - Multi-input Keras category classifier
      • ingredient-ner - NER model for ingredient extraction
      • clip - CLIP ViT-B/32 for image embeddings
      • front_image_classification - Binary classifier for front product images

    Hi! I’m new to open source and interested in AI/ML. I’d like to help with the documentation items in #374, specifically [the logos architecture schema / the insight types documentation]. Is that still open, and is anyone already working on it? Could you point me to the right files, and what format you’d like (Markdown in docs/)?
